Sichuan, Cantonese or Chinese-Indonesian?

"Chinese food" can mean very different things in Amsterdam. Many Dutch people mostly know Chinese-Indonesian takeaway, with dishes such as babi pangang and foe yong hai: a cuisine of its own that developed in the Netherlands. An authentic Chinese restaurant cooks differently.

Cantonese cuisine

From southern China, around Guangzhou and Hong Kong. Mild, focused on the pure flavour of the ingredients: dim sum, steamed fish and roast meats. Most Chinese restaurants in the Netherlands have Cantonese roots.

Sichuan cuisine

From western China and one of the four great culinary traditions of the country. Bold and layered: dried chilies, garlic and the tingling Sichuan pepper give dishes such as Kung Pao chicken, Mapo tofu and dry-fried green beans their character.
