For decades, the traditional Peking duck has been the signature dish of Sichuan Food in the heart of Amsterdam. A whole duck, carefully prepared and carved at your table, that unfolds into a complete three-course ritual.

The dish

Lacquered and crisp, carved at your table.

Peking duck is all about patience. The skin is slowly lacquered until crisp and glossy, while the meat stays tender. At Sichuan Food our staff carve the duck at your table, as tradition dictates, so you see and taste the dish at its finest.

It is not a side dish but the centerpiece of the evening: one duck that unfolds into three courses, each with its own flavour and texture. The three-course Peking duck is 63.50 euro per person and is meant to be shared, by two to four people.

How the duck ritual unfolds

The crispy skin

The first course: the lacquered, crisp skin with thin pancakes, spring onion, cucumber and hoisin sauce. You roll it yourself, bite by bite. The classic, familiar opening.

The soup

The second course: a clear duck broth drawn from the duck. Warm and full of flavour, a refined transition in the menu.

The meat, three ways

The third course: the duck meat, prepared three different ways and seasoned in the Sichuan tradition. Savoury, varied and a rich finish to the ritual.

Heritage

A dish with history.

Sichuan Food was once the first Chinese restaurant in the Netherlands to be awarded a Michelin star, a historic recognition of Chinese cuisine at the highest culinary level. You still taste that background in the care with which the duck is prepared.

Should I reserve or order the Peking duck in advance?
We recommend reserving in advance and letting us know you would like the Peking duck. That way we make sure the duck is ready for you, as it is a dish that takes time and preparation.
How many people can share one Peking duck?
One duck is usually enough for two to four people, depending on your appetite and whether you order other dishes alongside it. Our staff are happy to advise when you reserve.
What does served in three courses mean?
From one duck we serve three courses: first the crispy skin with thin pancakes and hoisin sauce, then a clear duck broth, and finally the duck meat prepared three different ways. The full three-course Peking duck is 63.50 euro per person.
Are there other dishes or vegetarian options?
Certainly. Alongside the Peking duck we have an extensive menu of authentic Sichuan dishes, including specialities with oyster, lobster and dim sum, as well as vegetarian choices.
